Guinness Pulled Pork

Hey everyone! Hope everyone is doing well! I'm still trying to get through this winter that will never end. Spring can't come fast enough. I'm really excited about sharing this recipe. I personally found it very very good. I ate it for about a week straight before getting sick of it. Here we go!

Ingredients:
6 tablespoons of dark brown sugar
2 teaspoons of cumin
1 teaspoon of paprika
2 teaspoons of salt
1 tablespoon of black pepper
2 bay leafs
3 teaspoons of meat seasoning. (steak, hickory, etc)
3 pounds of pork butt roast
12 oz Guinness
4 cloves of garlic
1 medium onion
Bottle of BBQ sauce of choice




First start by combining the dark brown sugar, cumin, paprika, salt, and the black pepper. If you only have regular brown sugar or would like to use that you can.  Shake in meat seasoning. By meat seasoning I mean steak seasoning, poultry seasoning, etc. I used a Hickory seasoning that we found at a local hardware store that smelled amazing. Set meat aside, or cover meat and let sit in the refrigerator overnight.





Next, we are going to take the onion and cut it into thicker pieces. For this I used a yellow onion, but a white onion would also work. Then take the 4 cloves of garlic and mince them. We will lay down the onion and garlic into the bottom of the crock pot to make a bed for the roast.







Once the onions are in the crock pot place the roast on top of them. Pour 3/4th of the bottle of Guinness into the crock pot around the roast. Add two bay leafs for some extra flavor. Cook on high for approximately four hours.






Once the roast is done cooking, take it out of the crock pot. Drain the crock pot with a strainer to make sure you don't lose the onion and garlic. Place the onion and garlic back into the turned off crock pot. Shred meat with a fork. Now, you can do a thin or chunky shredding, this is completely up to you. Add roast into the turned off crock pot along with the onion and garlic.




Now take your BBQ sauce of choice. We picked a Jim Bean BBQ sauce. Pour about half a cup into the roast mixture along with the remaining Guinness beer. Cook on low for a hour or two. When done enjoy! We put on some Kaiser Buns and poured extra BBQ sauce onto the meat and ate it that way. For the remaining part of the week I either ate it on a bun or a tortilla with some Mexican cheese, sour cream, and salsa. Sooooo goooood! This is a recipe we will be saving!
